![]() Before it was taken from its cradle in France and raised in the New World as a muscular brute, Cabernet Sauvignon had aristocratic roots which obliged it to greatness by striving to inspire rather than to assault. Our winery’s notion of Cabernet Sauvignon aligns not with the fruit-forward, fleshy style of Australia, but with the sinewy, deeply energetic offerings of Bordeaux. Unexpectedly for its Lodi address, Mark Lange’s vineyard south of town possesses a very distinctive terroir expression which reminds us of nothing so much as German chocolate cake with a raspberry glaze. These flavors invited a marriage with sweet oak vanilla, toffee and espresso aromas from medium- and heavy-toast French oak from the forest of Alliers. The balanced finesse one encounters in its structure possesses nevertheless a firm reductive strength which suggests longevity and invites the opportunity for bottle development. On the other hand, the wine offers today splendid aromatics to linger on the palate and enter into playful dialogue with other elements of your dinner. |
